Ampalaya is one of my favorite veggies and one of the healthiest!
I make sure I include this vegetable in our weekly meal. There are several dishes you can prepare using ampalaya. One of which is this easy recipe “enseladang ampalaya” other dishes you may want to cook in the future are pinakbet (popular dish in ilocos region), ginisang ampalaya (sauteed bitter gourd), and beef ampalaya in oyster sauce (this is yummy :)) Don’t worry, I will post all these ampalaya recipes soon!
Here are some infos and benefits of ampalaya:
Ampalaya contains a mixture of flavanoids and alkaloids which makes the pancreas produce more insulin that controls the blood sugar in diabetics. Aside from Ampalaya’s medicinal value, it is a good source of vitamins A, B and C, iron, folic acid, phosphorous and calcium.

Preparation & Use of Ampalaya:
• For coughs, fever, worms, diarrhea, diabetes, juice Ampalaya leaves and drink a spoonful daily.

ENSALADANG AMPALAYA
Ingredients:
1 big size ampalaya, cut in half de-seeded and sliced crosswise
1 medium size onion, chopped finely
1 medium size tomato, chopped
1/4 cup bagoong na isda, sauce
2 tbsp. vinegar
Cooking procedure:
In a casserole boil water and blanch sliced ampalaya for 1/2 to a minute, remove from water and drain, drench in a bowl of iced cold water to let cool and stop the cooking process. In a big bowl, toss ampalaya, and all other ingredients. Serve immediately for maximum crunch.
